Delestage is a process of draining off a tank until the skins remain and aerating the juice in a second tank, prior to pumping it back over the skins.
You can perform this process in vintrace via the Rack and Return operation, in combination with a treatment to signify that a delestage was performed.
To set this up you will first need to create the delestage treatment.
Creating the Treatment
This can be done via the Winery setup > Treatment > Treatment (product).
Click on New Product Treatments... to create a new treatment for your Delestage.
You will need to name the treatment, and ensure that it applies to Wine/Juice.
Filling in the Description is useful for describing the treatment, and filling out the Technique/Procedure information is used to provide additional details or instruction when performing the delestage on a work order.
Once you have set up the delestage treatment click Save.
Performing a delestage
You can perform the delestage via starting a rack and return operation, this can be done via the Operations menu on the main screen, the Operations menu on the Product overview, or placed onto a work order.
You will want to select the Delestage treatment in the Transfer details section of the rack and return, and select your Temporary vessel on the right hand side of the rack and return.
The destination tank on a rack and return is used as a temporary vessel and the wine is immediately returned to the original tank as part of rack and return.
During this process the Delestage treatment will also be applied to the wine.
Once the rack and return has been completed with the delestage treatment, the delestage will appear in the history of the wine.
If you have included any Treatment/Procedure information when creating the delestage treatment these details will appear on the printed work order with any details you wish to convey to your cellar staff.
